Fish and Chip

Ingredients:

  • 4-5 pcs Pacific Dory fillet, thawed
  • 1 cup all-purpose flour
  • 1 cup beer (or sparkling water for a non-alcoholic version)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Vegetable oil for frying
  • 4 large potatoes, peeled and cut into fries
  • Salt to taste
  • Lemon wedges for serving
  • Tartar sauce for serving

Instructions:

  1. Prepare the Fish:

    • Thaw the dory fillets in the refrigerator or under cold water. Pat dry with paper towels.
  2. Make the Batter:

    • In a bowl, mix flour, baking powder, and salt. Gradually add the beer (or sparkling water) and whisk until smooth.
  3. Prepare the Fries:

    • Rinse the potato fries in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 4-5 minutes. Drain on paper towels and season with salt.
  4. Fry the Fish:

    • Heat vegetable oil in a deep fryer or large pot to 375°F (190°C). Dip the dory fillets into the batter, allowing excess to drip off. Fry the fillets in batches until golden brown and cooked through, about 4-5 minutes. Drain on paper towels.
  5. Serve:

    • Serve the fish and chips hot with lemon wedges and tartar sauce.
