Fish and Chip
Ingredients:
- 4-5 pcs Pacific Dory fillet, thawed
- 1 cup all-purpose flour
- 1 cup beer (or sparkling water for a non-alcoholic version)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Vegetable oil for frying
- 4 large potatoes, peeled and cut into fries
- Salt to taste
- Lemon wedges for serving
- Tartar sauce for serving
Instructions:

Prepare the Fish:
- Thaw the dory fillets in the refrigerator or under cold water. Pat dry with paper towels.

Make the Batter:
- In a bowl, mix flour, baking powder, and salt. Gradually add the beer (or sparkling water) and whisk until smooth.

Prepare the Fries:
- Rinse the potato fries in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 4-5 minutes. Drain on paper towels and season with salt.

Fry the Fish:
- Heat vegetable oil in a deep fryer or large pot to 375°F (190°C). Dip the dory fillets into the batter, allowing excess to drip off. Fry the fillets in batches until golden brown and cooked through, about 4-5 minutes. Drain on paper towels.

- Serve the fish and chips hot with lemon wedges and tartar sauce.
