Fried Oyster Omelette (Orh Jian)
Ingredients:
- 300g oyster meat, thawed
- 4 eggs, beaten
- 1/2 cup tapioca starch mixed with 1/2 cup water
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fish sauce, 1 tablespoon soy sauce
- Fresh cilantro and chili sauce to serve
Instructions:
- Heat oil in wok, sautΓ© garlic until fragrant. Pour in tapioca batter and spread evenly. Cook 2-3 minutes until starting to set.
- Add beaten eggs over batter, stir gently once partially set.
- Add oyster meat, fish sauce, and soy sauce. Cook 3-4 minutes until oysters are cooked and omelette is golden and crispy.
- Garnish with cilantro and serve with chili sauce.
