Fried Oyster Omelette (Orh Jian)

Ingredients:

  • 300g oyster meat, thawed
  • 4 eggs, beaten
  • 1/2 cup tapioca starch mixed with 1/2 cup water
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fish sauce, 1 tablespoon soy sauce
  • Fresh cilantro and chili sauce to serve

Instructions:

  1. Heat oil in wok, sautΓ© garlic until fragrant. Pour in tapioca batter and spread evenly. Cook 2-3 minutes until starting to set.
  2. Add beaten eggs over batter, stir gently once partially set.
  3. Add oyster meat, fish sauce, and soy sauce. Cook 3-4 minutes until oysters are cooked and omelette is golden and crispy.
  4. Garnish with cilantro and serve with chili sauce.
