Fried Oyster Omelette (Orh Jian)

Ingredients:

  • 300g oyster meat, thawed
  • 4 eggs
  • 1/2 cup tapioca starch
  • 1/2 cup water
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • Fresh cilantro, chopped
  • Chili sauce for serving

Instructions:

  1. Prepare the Batter:

    • In a bowl, mix tapioca starch and water to form a smooth batter.
  2. Cook the Omelette:

    • Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and sauté until fragrant.
    • Pour the batter into the skillet and spread it out evenly. Cook for 2-3 minutes until the batter starts to set.
    • Add the beaten eggs over the batter and cook until the eggs are slightly set, then stir gently to mix.
    • Add the oyster meat and season with fish sauce and soy sauce. Cook for another 3-4 minutes until the oysters are cooked through and the omelette is golden and crispy.
  3. Serve:

    • Transfer the omelette to a serving plate. Garnish with fresh cilantro and serve with chili sauce on the side.
