Fried Oyster Omelette (Orh Jian)
Ingredients:
- 300g oyster meat, thawed
- 4 eggs
- 1/2 cup tapioca starch
- 1/2 cup water
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- Fresh cilantro, chopped
- Chili sauce for serving
Instructions:

Prepare the Batter:
- In a bowl, mix tapioca starch and water to form a smooth batter.

Cook the Omelette:
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and sauté until fragrant.
- Pour the batter into the skillet and spread it out evenly. Cook for 2-3 minutes until the batter starts to set.
- Add the beaten eggs over the batter and cook until the eggs are slightly set, then stir gently to mix.
- Add the oyster meat and season with fish sauce and soy sauce. Cook for another 3-4 minutes until the oysters are cooked through and the omelette is golden and crispy.

- Transfer the omelette to a serving plate. Garnish with fresh cilantro and serve with chili sauce on the side.
