Miso Marinated Black Cod

Ingredients:

  • 4 black cod fillets (about 170g each)
  • 1/4 cup white miso paste
  • 1/4 cup sake
  • 1/4 cup mirin (sweet rice wine)
  • 2 tablespoons sugar
  • Lemon wedges and fresh herbs for garnish

Instructions:

  1. Mix miso paste, sake, mirin, and sugar until smooth. Marinate black cod fillets for 24-48 hours in the refrigerator.
  2. Preheat oven to 200°C. Remove fillets from marinade, leaving a thin layer on the fish.
  3. Bake on a lined baking sheet for 10-12 minutes until opaque and flaking easily.
  4. Optional: broil for the last 2-3 minutes for a caramelized glaze.
  5. Serve with steamed rice, sautéed vegetables, or a simple salad.
