Miso-Marinated Black Cod

Ingredients:

  • Black Cod Marinade:

    • 4 black cod fillets (6 ounces each)
    • 1/4 cup white miso paste
    • 1/4 cup sake
    • 1/4 cup mirin (sweet rice wine)
    • 2 tablespoons sugar
  • Garnish:

    • Lemon wedges
    • Fresh herbs (e.g., cilantro or parsley)

Instructions:

  1. Prepare the Marinade:

    • In a small bowl, combine the white miso paste, sake, mirin, and sugar. Mix well until the sugar is dissolved and the marinade is smooth.
  2. Marinate the Black Cod:

    • Place the black cod fillets in a large resealable plastic bag or shallow dish.
    • Pour the marinade over the fillets, ensuring they are evenly coated.
    • Seal the bag or cover the dish with plastic wrap, and refrigerate for at least 24 hours, up to 48 hours, for best results.
  3. Preheat the Oven:

    • Preheat your oven to 400°F (200°C).
  4. Cook the Black Cod:

    • Remove the black cod fillets from the marinade, wiping off any excess but leaving a thin layer on the fish.
    • Place the fillets on a baking sheet lined with parchment paper or a lightly greased broiler pan.
    • Bake in the preheated oven for 10-12 minutes, or until the fish is opaque and flakes easily with a fork.
    • For an additional caramelized glaze, you can place the fillets under the broiler for the last 2-3 minutes of cooking, watching closely to prevent burning.
  5. Serve:

    • Transfer the cooked black cod fillets to serving plates.
    • Garnish with lemon wedges and fresh herbs.
  6. Optional Sides:

    • Serve with steamed rice, sautéed vegetables, or a simple salad to complement the rich flavors of the miso-marinated black cod.
