Miso Marinated Black Cod
Ingredients:
- 4 black cod fillets (about 170g each)
- 1/4 cup white miso paste
- 1/4 cup sake
- 1/4 cup mirin (sweet rice wine)
- 2 tablespoons sugar
- Lemon wedges and fresh herbs for garnish
Instructions:
- Mix miso paste, sake, mirin, and sugar until smooth. Marinate black cod fillets for 24-48 hours in the refrigerator.
- Preheat oven to 200°C. Remove fillets from marinade, leaving a thin layer on the fish.
- Bake on a lined baking sheet for 10-12 minutes until opaque and flaking easily.
- Optional: broil for the last 2-3 minutes for a caramelized glaze.
- Serve with steamed rice, sautéed vegetables, or a simple salad.
