Steamed Chinese Pomfret Recipe

Ingredients:

  • 1 whole pomfret fish (about 500-600g), cleaned and scaled
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Or you may purchase our readymade steam fish sauce.
  • 1 thumb-sized piece of ginger, thinly sliced
  • 3-4 scallions, cut into 2-inch pieces
  • 1 tablespoon cooking wine (optional)
  • Fresh cilantro or parsley for garnish
  • 1 red chili, sliced (optional)
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil

Instructions:

  1. Prepare the Fish:

    • Rinse the pomfret fish under cold water and pat dry with paper towels. Make a few diagonal cuts on both sides of the fish to allow the flavors to penetrate.
  2. Season the Fish:

    • Rub a little salt and pepper inside and outside the fish. Place ginger slices and scallion pieces both inside the cavity and on top of the fish. If using, pour the cooking wine over the fish.
  3. Prepare the Steaming Setup:

    • Fill a large pot or wok with about 2 inches of water and bring it to a boil. Place a steaming rack or a heatproof plate in the pot/wok.
  4. Steam the Fish:

    • Place the fish on a heatproof plate if not using a steaming rack. Carefully place the plate with the fish on the steaming rack. Cover the pot/wok with a lid.
    • Steam the fish over high heat for about 10-15 minutes, depending on the size of the fish. The fish is done when the flesh turns opaque and flakes easily with a fork.
  5. Prepare the Sauce:

    • While the fish is steaming, mix the soy sauce and sesame oil in a small bowl.
    • In a separate small pan, heat the vegetable oil until it is very hot.
  6. Final Touches:

    • Once the fish is done steaming, carefully remove it from the steamer. Pour the soy sauce and sesame oil mixture over the fish.
    • Drizzle the hot vegetable oil over the scallions and ginger on top of the fish. This will release the aroma of the ginger and scallions.
    • Garnish with fresh cilantro or parsley and sliced red chili if desired.
  7. Serve:

    • Serve the steamed pomfret hot with steamed rice and your favorite vegetables.
