Batang Fish Curry
Ingredients:
- 500g batang steak, random part, thawed and cut into chunks
- 2 tablespoons vegetable oil, 1 large onion, 3 cloves garlic, 1 tablespoon ginger (all minced/chopped)
- 2 tablespoons curry powder, 1 teaspoon turmeric, 1 teaspoon cumin, 1 teaspoon coriander
- 1 can (400ml) coconut milk, 1 can (400g) diced tomatoes
- 2 medium potatoes cubed, 1 red bell pepper sliced
- Salt, pepper, fresh cilantro to serve
Instructions:
- Sauté onion, garlic, and ginger until fragrant and translucent. Add spices and cook 1-2 minutes.
- Pour in coconut milk and tomatoes. Add potatoes and bell pepper.
- Add batang fish chunks. Simmer 20-25 minutes until fish is cooked and potatoes are tender. Season to taste.
- Garnish with cilantro and serve with steamed rice or naan.
