Pork Soft Bone Soup

Ingredients:

  • 500g pork soft bone, thawed
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 medium carrots, chopped
  • 2 potatoes, cubed
  • 1 cup daikon radish, sliced
  • 2 stalks celery, chopped
  • 1 cup cabbage, shredded
  • 1 cup chicken broth
  • 6 cups water
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Prepare the Pork Soft Bone:

    • Thaw the pork soft bone in the refrigerator overnight or under cold water. Rinse thoroughly and pat dry.
  2. Sear the Pork:

    • Heat the vegetable oil in a large pot over medium-high heat. Add the pork soft bone pieces and sear until browned on all sides. Remove and set aside.
  3. Cook the Aromatics:

    • In the same pot, add the chopped onion, minced garlic, and ginger. Sauté until the onion is translucent, about 5 minutes.
  4. Add Vegetables and Broth:

    • Add the chopped carrots, potatoes, daikon radish, celery, and cabbage to the pot. Stir well to combine.
  5. Simmer the Soup:

    • Pour in the chicken broth and water. Return the seared pork soft bone to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the pork is tender and the flavors are well incorporated. Season with salt and pepper to taste.
  6. Serve:

    • Garnish with fresh cilantro and serve hot.
