Pork Soft Bone Soup
Ingredients:
- 500g pork soft bone, thawed
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 medium carrots, chopped
- 2 potatoes, cubed
- 1 cup daikon radish, sliced
- 2 stalks celery, chopped
- 1 cup cabbage, shredded
- 1 cup chicken broth
- 6 cups water
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:

Prepare the Pork Soft Bone:
- Thaw the pork soft bone in the refrigerator overnight or under cold water. Rinse thoroughly and pat dry.

Sear the Pork:
- Heat the vegetable oil in a large pot over medium-high heat. Add the pork soft bone pieces and sear until browned on all sides. Remove and set aside.

Cook the Aromatics:
- In the same pot, add the chopped onion, minced garlic, and ginger. Sauté until the onion is translucent, about 5 minutes.

Add Vegetables and Broth:
- Add the chopped carrots, potatoes, daikon radish, celery, and cabbage to the pot. Stir well to combine.

Simmer the Soup:
- Pour in the chicken broth and water. Return the seared pork soft bone to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the pork is tender and the flavors are well incorporated. Season with salt and pepper to taste.
