Roasted Half Chicken
Ingredients:
- 1 half chicken (600g), thawed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary and thyme, chopped
- Salt and pepper to taste
- 1 lemon, sliced
- 1 onion, 2 carrots, 4 potatoes β quartered/chopped
Instructions:
- Thaw chicken, rinse and pat dry. Preheat oven to 190Β°C.
- Rub chicken with olive oil, garlic, rosemary, thyme, salt, and pepper.
- Arrange lemon, onion, carrots, and potatoes in roasting pan. Place chicken on top.
- Roast 45-60 minutes until internal temperature reaches 74Β°C and skin is golden brown.
- Rest 10 minutes before carving. Serve with roasted vegetables.
