Roasted Half Chicken

Ingredients:

  • 1 half chicken (600g), thawed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary and thyme, chopped
  • Salt and pepper to taste
  • 1 lemon, sliced
  • 1 onion, 2 carrots, 4 potatoes β€” quartered/chopped

Instructions:

  1. Thaw chicken, rinse and pat dry. Preheat oven to 190Β°C.
  2. Rub chicken with olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Arrange lemon, onion, carrots, and potatoes in roasting pan. Place chicken on top.
  4. Roast 45-60 minutes until internal temperature reaches 74Β°C and skin is golden brown.
  5. Rest 10 minutes before carving. Serve with roasted vegetables.
