Roasted Half Chicken
Ingredients:
- 1 half chicken (600g), thawed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 1 lemon, sliced
- 1 onion, quartered
- 2 carrots, peeled and chopped
- 4 potatoes, quartered
Instructions:

Prepare the Chicken:
- Thaw the half chicken in the refrigerator overnight or under cold water. Rinse thoroughly and pat dry.
- Preheat the oven to 375°F (190°C).

Season the Chicken:
- Rub the chicken with olive oil, minced garlic, rosemary, thyme, salt, and pepper. Ensure it is evenly coated.

Prepare the Vegetables:
- Arrange the lemon slices, onion, carrots, and potatoes in a roasting pan. Place the seasoned chicken on top of the vegetables.

Roast the Chicken:
- Roast in the preheated oven for 45-60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.

- Let the chicken rest for 10 minutes before carving. Serve with the roasted vegetables.
