Roasted Half Chicken

Ingredients:

  • 1 half chicken (600g), thawed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 lemon, sliced
  • 1 onion, quartered
  • 2 carrots, peeled and chopped
  • 4 potatoes, quartered

Instructions:

  1. Prepare the Chicken:

    • Thaw the half chicken in the refrigerator overnight or under cold water. Rinse thoroughly and pat dry.
    • Preheat the oven to 375°F (190°C).
  2. Season the Chicken:

    • Rub the chicken with olive oil, minced garlic, rosemary, thyme, salt, and pepper. Ensure it is evenly coated.
  3. Prepare the Vegetables:

    • Arrange the lemon slices, onion, carrots, and potatoes in a roasting pan. Place the seasoned chicken on top of the vegetables.
  4. Roast the Chicken:

    • Roast in the preheated oven for 45-60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
  5. Serve:

    • Let the chicken rest for 10 minutes before carving. Serve with the roasted vegetables.
